Kimchi Spinach Salad with Curried Chickpeas

My sister recommended this recipe. It is one of the many recipes found in Dr. Mindy Pelz' new book, "Fast Like a Girl." The book goes through the benefits of fasting, and is tailored for women. Dr. Pelz included recipes recommended for the different stages of a woman's cycle; menstrual, follicular, ovulation, and luteal phase. This recipe was part of her ketobiotic recipes. I love the tangyness of the kimchi and the deep flavors of the turmeric, cumin and garlic. I also enjoyed that I got my carb fix from the garbanzos and that it was vegan. This is loaded with powerful gut health healing properties. I did take a digestive enzyme before consuming the salad to help my gut digest the kimchi. Do only eat one serving of it as it's quite powerful.
